Instructions
Marinate chicken with salt and pepper, then sear in hot oil until juices are sealed.
In a separate pot, sauté spices, shallots, onions, ginger, and green chillies until fragrant and golden.
Add seared chicken and vegetables, then pour in coconut cream and water. Simmer covered for 10 minutes.
Mix milk with corn flour to make a slurry, then add to the stew along with peas and seasonings. Cook for 5 more minutes.
Finish with chopped coriander and serve hot with bread or flatbreads.
Notes
This stew pairs beautifully with crusty bread or traditional Indian flatbreads for a complete meal.
