A hearty and flavorful chicken soup made quickly with shredded rotisserie chicken, fresh vegetables, and noodles. Perfect for a comforting meal in under 30 minutes.

Ingredients

Meat

  • 1 whole rotisserie chicken (2-3 lbs), shredded (approx 3-4 cups meat)
  • 2 tbsp unsalted butter (or olive oil)
  • 1 large yellow onion, diced
  • 3-4 carrots peeled and sliced carrots
  • 3-4 celery stalks sliced celery
  • 4-6 cloves garlic, minced
  • 8 cups low-sodium chicken broth (64 oz)
  • 8-12 oz wide egg noodles
  • 1/2 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped (optional)

Instructions 

  • Pull meat from the warm rotisserie chicken and shred into bite-sized pieces. Dice the onion, slice carrots and celery, and mince garlic.
  • In a large pot, melt butter and sauté vegetables for 8-10 minutes until soft. Add garlic and cook 1-2 minutes more.
  • Pour in chicken broth, scrape the bottom, bring to a boil, then simmer for 10-15 minutes. Season with salt and pepper.
  • Add noodles and cook for 7-10 minutes until al dente. During last 2 minutes, stir in shredded chicken. Turn off heat and add parsley and dill.

Notes

Use fresh herbs for best flavor, and adjust seasoning to taste.
