Instructions
In a large pot, sauté onion in oil until softened (~5 min).
Add chicken and cook until done (~5 min), flipping often.
Stir in garlic, ginger, and coriander; cook for 1 min until fragrant.
Add coconut milk, chicken stock, carrots, curry paste, salt, and pepper; bring to a gentle boil and cook until carrots are tender (~5 min).
Turn off heat, add spinach, cilantro, lime juice, and stir until spinach wilts (~1-2 min). Adjust seasoning and sweetness to taste.
Notes
Adjust seasoning and spice level to your preference. Serve with naan if desired.
