A flavorful and easy-to-make rice bowl featuring tender chicken, steamed broccoli, and a savory sauce topped with spicy mayo and sesame seeds.

Ingredients

Rice and Vegetables

  • 2 cups uncooked rice
  • 2 small heads broccoli (chopped)

Chicken

  • 3 large chicken breasts

Seasonings and Sauces

  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with water ((sub cornstarch))
  • 1/2 cup mayo
  • 1 tbsp sriracha (for mayo)
  • 2-3 tbsp water

Toppings

  • to taste sesame seeds for topping

Instructions 

  • Cook rice and steam broccoli until tender.
  • Cut chicken into small pieces, toss with oil and spices, then air fry at 400°F for 12 minutes.
  • Combine soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ginger; boil and add arrowroot slurry to thicken.
  • Assemble bowls with rice, broccoli, chicken, then pour sauce over. Mix spicy mayo ingredients and drizzle on top. Garnish with sesame seeds.

Notes

For extra flavor, marinate chicken longer or add additional toppings like sliced green onions.
