A flavorful and smoky chicken curry infused with spices and finished with a unique smoking technique for depth of flavor.

Ingredients

Meat

  • 2 lbs Chicken meat (cut into 2 inch pieces)
  • 1 tbsp Lime juice
  • 3 tsp Kashmiri chilli powder
  • 0.5 tsp Turmeric powder
  • 2 tsp Salt
  • 2 tbsp Coconut oil
  • 3 fenugreek seeds Fenugreek seeds
  • 1 large Onion (thinly sliced)
  • 1 tbsp Ginger (freshly grated)
  • 0.25 cup Coconut milk
  • 1 small piece Coal (for smoking)
  • 1 tsp Ghee

Instructions 

  • Marinate chicken with lime juice, 2 tsp chilli powder, 1/4 tsp turmeric, and 1/2 tsp salt for 30 mins.
  • Soak tamarind in hot water; set aside. Cook fenugreek seeds in oil until dark, then add onions and cook until browned, adding tamarind water as needed.
  • Add ginger and cook for 2 mins. Mix remaining spices with tamarind water to form a paste, then add to onions and cook until fragrant and darker.
  • Add remaining tamarind water, then chicken and salt. Cover and cook for 15 mins until chicken is done. Stir occasionally.
  • Stir in coconut milk, bring to a simmer, cook for 2 mins, then turn off heat. Smoke the curry with hot coal and ghee for 10 mins before serving.
