A delicious one-pan dish combining caramelized onions, tender chicken, and melted Swiss and provolone cheeses for a comforting meal.

Instructions
Add olive oil and sliced onions to a large skillet over medium-high heat. Sauté until caramelized, about 7-10 minutes. Remove onions and set aside.
Add chicken breasts to the skillet and cook 3-4 minutes per side until cooked through. Remove and set aside.
Melt butter in the skillet. Stir in flour, then add beef broth, oregano, thyme, salt, and pepper. Simmer until slightly thickened, 1-2 minutes.
Return chicken and onions to the skillet, top with Swiss and provolone cheeses. Broil for 1-2 minutes until cheese melts.
Notes
For extra flavor, caramelize the onions slowly over medium heat.
