Enjoy flavorful, tender chicken meatballs glazed in a spicy, sweet Gochujang sauce, baked on a sheet pan with broccoli for a quick and satisfying meal.

1poundground turkey or chicken
2tablespoonslow sodium soy sauce or tamari
1-2tablespoonsGochujang (Korean chili paste)
3green onionsgreen onions, finely chopped
1inchfresh ginger, grated
1clovegarlic, minced or grated
1large headbroccoli, cut into florets
2tablespoonssesame oil or extra virgin olive oil
1/3cuplow sodium soy sauce or tamari
2tablespoonshoney
2tablespoonsrice vinegar
1-2tablespoonsGochujang (Korean chili paste)
1inchfresh ginger, grated
2clovesgarlic, grated
1tablespoontoasted sesame oil
1/4cupplain Greek yogurt or avocado oil mayo
For serving
rice, sesame seeds, chiles, and Kimchi(for serving)
Instructions
Preheat oven to 450°F (230°C) and line a baking sheet with parchment.
Mix chicken, soy sauce, Gochujang, green onions, ginger, and garlic. Form into 15-16 meatballs and place on the sheet. Toss broccoli with 1 tbsp oil, salt, and pepper, and add to sheet. Bake 15 minutes.
Prepare the sauce by boiling soy sauce, honey, rice vinegar, Gochujang, ginger, garlic, sesame oil, and water for 5 minutes until thickened.
Toss meatballs with half the sauce, bake 2-3 minutes, then serve over rice topped with green onions and sesame seeds. Serve broccoli on the side.
Notes
Use fresh Gochujang for best flavor and adjust spice level to taste.
