A flavorful and healthy stir-fry combining tender chicken with fresh vegetables, zesty orange, and ginger for a delightful meal.

Ingredients

Main ingredients

  • 3 tablespoons olive oil
  • 1 ½ cup carrots, peeled and cut into strips
  • 1 red bell pepper seeded and cut into strips
  • 6 skinless boneless chicken breast approx. 1 1/2 lbs
  • Salt and black pepper to taste
  • 1 tablespoon grated fresh ginger
  • 3 cloves garlic, minced
  • 1 ½ cups chicken broth
  • ¼ cup frozen orange juice concentrate, thawed
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup frozen shelled sweet soybeans (edamame), thawed
  • 1 tablespoon sesame seeds (optional)

Instructions 

  • Cook carrots and red pepper in 1 tbsp oil for 5 minutes; transfer to a bowl.
  • Cook chicken in 1 tbsp oil until no longer pink; transfer to bowl.
  • Sauté ginger and garlic in remaining oil; add broth, orange juice, soy sauce, and thicken with cornstarch mixture for 2 minutes.
  • Return chicken and vegetables to skillet; add edamame and cook 3-5 minutes until heated and coated.
  • Sprinkle with sesame seeds and serve.

Notes

For extra flavor, add a splash of orange zest or a drizzle of honey.
