Vegetables
2mediumsweet potatoes(peeled and diced into 1-inch cubes)
1mediumyellow onion(diced)
3clovesgarlic(finely minced)

1teaspoonsmoked paprika
1teaspoonground cumin
1teaspoonsea salt
0.5teaspoonblack pepper(freshly ground)
0.25teaspoonred pepper flakes(optional)
1teaspoonfresh thyme leaves(chopped, plus extra for garnish)
Oils & Liquids
2tablespoonsextra virgin olive oil(divided)
1tablespoonfresh lemon juice(optional)
Instructions
Pat chicken dry, toss with half the spices, and let sit 5 minutes.
Cook seasoned chicken in a hot skillet with 1 tbsp olive oil until golden, then set aside.
Add remaining oil, cook sweet potatoes with spices until caramelized and softened, about 8 minutes.
Add onion and garlic, cook until translucent and fragrant, 3 minutes.
Return chicken to skillet, add thyme, cover, and cook 6-8 minutes until chicken is cooked through and sweet potatoes are tender. Drizzle with lemon juice if using, garnish with extra thyme.
