A quick and flavorful Italian-inspired dish featuring tender chicken in a tangy lemon caper sauce, all cooked in one pan for easy cleanup.

Ingredients

Dried ingredients

  • 0.25 cup all purpose flour
  • 2 pounds chicken breasts (cut in half horizontally or pounded thin)
  • 6 tablespoons unsalted butter (divided)
  • 1 tablespoon minced garlic
  • 0.5 cup chicken broth
  • 0.33 cup lemon juice
  • 0.25 cup capers (drained and rinsed)
  • 0.5 teaspoon pepper

Instructions 

  • Pound or cut chicken thin, then dip in flour, shaking off excess.
  • Melt 4 tbsp butter in a pan over medium heat and cook chicken until browned, about 4-5 minutes per side. Remove and set aside.
  • In the same pan, melt remaining butter, sauté garlic for 2 minutes, then add broth, lemon juice, and capers. Bring to a boil.
  • Return chicken to pan, simmer for 5 minutes until cooked through, then season with pepper and serve.

Notes

For extra flavor, garnish with fresh parsley or lemon slices.
