Instructions
Bring 1.5 cups of water or broth to a boil, stir in the couscous, cover, and remove from heat. Fluff after steaming.
Mix Moroccan spices in a bowl. Season chicken with spice mix and 1 tablespoon oil, then cook in a skillet for 3-4 minutes until browned.
Add tomato paste and broth to the chicken, cook until sauce thickens and chicken is cooked through, about 5-7 minutes. Season with salt and pepper.
Combine cucumber, cherry tomatoes, and red onion in a bowl. Divide couscous, chicken, and veggies into bowls, top with parsley and Greek yogurt. Serve.
