Quick and flavorful chicken tacos made effortlessly in the Instant Pot, perfect for a weeknight dinner.

Ingredients

Broth and Seasonings

  • 1½ cups low-sodium chicken broth
  • 2 teaspoons taco seasoning

Chicken

  • 1 pound boneless, skinless chicken breasts (or chicken thighs)

Salsa

  • ⅓ cup salsa

Lime

  • 1 medium lime (optional, but highly encouraged)

Instructions 

  • Combine chicken broth, taco seasoning, chicken, salsa, and lime in the inner pot of your pressure cooker. Nestle the chicken into the liquid. Dollop salsa evenly over the chicken. DO NOT STIR!
  • Seal the lid and set to high pressure. Cook for 6-8 minutes depending on chicken size. For frozen, add 2 minutes.
  • Let pressure release naturally for 10 minutes, then quick release remaining pressure.
  • Remove lid, transfer chicken to a bowl, and shred with forks or a mixer.
  • Add lime zest and juice to shredded chicken, stir well. Serve as desired.

Notes

Use fresh lime for the best flavor, and adjust seasoning to taste.
