This hearty Instant Pot chicken pot roast is a flavorful and easy-to-make meal perfect for busy weeknights. Tender chicken paired with vegetables creates a comforting dish in under an hour.

Ingredients

  • 1 whole chicken (approximately 3 pounds)
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil
  • 1.5 pounds baby potatoes (Yukon gold, white, or red)
  • 1 medium yellow onion (diced small)
  • 2 whole carrots (peeled and sliced)
  • 1 cup low sodium chicken broth

Instructions 

  • Remove giblets from the chicken and season all sides with salt, pepper, Italian seasoning, garlic, and onion powder.
  • Turn on the Instant Pot to sauté, add olive oil, then brown the chicken for about 2 minutes per side. Remove and set aside.
  • Add potatoes, onions, and carrots to the pot, sauté for 2-3 minutes, then pour in chicken broth.
  • Return chicken to the pot, seal the lid, set to high pressure for 25 minutes, then naturally release for 15 minutes.
  • Carefully remove the chicken, slice, and serve with vegetables. Optional: broil for a golden top.

Ensure the chicken is fully cooked before serving. Adjust seasoning to taste.
