A quick and nutritious stir fry featuring tender chicken and colorful vegetables, perfect for a healthy weeknight dinner.

1 1/4poundsboneless chicken breast or thighs(cut into 1 inch pieces)
1largewhite onion(thinly sliced)
2largebell peppers(thinly sliced)
1poundbroccoli(chopped)
3largegarlic cloves(minced)
1inchginger(peeled and minced)
1 3/4cupchicken stock(low sodium)
1/4cupsoy sauce(Bragg's liquid aminos)
2tablespoonshoney, maple syrup or brown sugar
1tablespoonrice vinegar
3tablespoonscornstarch
1tablespoonsesame seeds(for garnish)
2tablespoonsavocado oil(for frying)
Instructions
Prep all vegetables and chicken before cooking. Whisk together chicken stock, soy sauce, honey, vinegar, cornstarch, garlic, and ginger; set aside.
Heat 1 tbsp oil in a skillet. Cook chicken until browned and cooked through, then remove. In the same skillet, cook onion and bell peppers for 2 minutes. Remove and set aside.
Add broccoli to skillet, pour in stir fry sauce, bring to boil, and cook until thickened. Return chicken, onion, and peppers to skillet, stir gently, then turn off heat.
Garnish with sesame seeds and serve hot over your choice of grains or noodles.
Notes
For extra flavor, marinate chicken in some soy sauce and ginger beforehand.
