Instructions
Preheat oven to 375°F (190°C). Prepare a 9x13-inch baking dish.
Cook vegetables in oil until slightly al dente, then stir in flour and cook briefly.
Gradually add milk, stirring until thickened. Off heat, mix in peas, rice, and chicken.
Transfer mixture to baking dish, add broth, cover with foil, and bake 30 minutes.
Remove foil, stir, bake another 30 minutes, then let sit 15 minutes before serving.
Notes
For extra flavor, add fresh herbs or a sprinkle of cheese before baking.
