A quick and flavorful dish combining tender chicken, vegetables, and rice in a savory teriyaki sauce.
Ingredients
Rice

cups
cooked rice (preferably day-old)
Chicken
2
pieces
chicken breasts or thighs, diced
Sauces & Oils
2
tbsp
teriyaki sauce (plus more to taste)
2
tbsp
soy sauce
1
tbsp
sesame oil or vegetable oil
Vegetables
1
cup
mixed vegetables (peas, carrots, corn)
Eggs
2
pcs
eggs, lightly beaten
Green Onions

green onions, sliced
Instructions
Heat oil in a skillet, cook diced chicken for 5–7 minutes until browned, then add 2 tbsp teriyaki sauce and remove from pan.
In the same pan, scramble eggs until just cooked, then push to one side.
Add mixed vegetables to the pan and cook for 2–3 minutes until softened.
Stir in cooked rice and chicken, then add soy sauce and additional teriyaki sauce to taste. Stir-fry for 2–3 minutes until heated through.
Garnish with sliced green onions and serve hot.
Notes
Use day-old rice for best texture and flavor.
