Easy Teriyaki Chicken Fried Rice

A quick and flavorful dish combining tender chicken, vegetables, and rice in a savory teriyaki sauce.

Ingredients

Rice

  • 2 cups cooked rice (preferably day-old)

Chicken

  • 2 pieces chicken breasts or thighs, diced

Sauces & Oils

  • 2 tbsp teriyaki sauce (plus more to taste)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil or vegetable oil

Vegetables

  • 1 cup mixed vegetables (peas, carrots, corn)

Eggs

  • 2 pcs eggs, lightly beaten

Green Onions

  • 2 pcs green onions, sliced

Instructions 

  • Heat oil in a skillet, cook diced chicken for 5–7 minutes until browned, then add 2 tbsp teriyaki sauce and remove from pan.
  • In the same pan, scramble eggs until just cooked, then push to one side.
  • Add mixed vegetables to the pan and cook for 2–3 minutes until softened.
  • Stir in cooked rice and chicken, then add soy sauce and additional teriyaki sauce to taste. Stir-fry for 2–3 minutes until heated through.
  • Garnish with sliced green onions and serve hot.

Notes

Use day-old rice for best texture and flavor.
