Instructions
Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened, about 5–6 minutes.
Add garlic and thyme; cook for 1 minute until fragrant.
Pour in chicken broth and water; bring to a gentle boil. Stir in chicken and gnocchi; simmer 5–7 minutes until tender.
Reduce heat, stir in milk or half-and-half, then add spinach; cook 2–3 minutes until wilted. Season with salt, pepper, and optional red pepper flakes.
