Easy Chicken Sausage and Cabbage Skillet

A quick and flavorful skillet dish combining chicken sausage, fennel, and cabbage with a tangy apple cider glaze.

Ingredients

Sauce and Glaze

  • 2 Tbsp apple cider vinegar
  • 1 Tbsp whole-grain mustard
  • 2 cloves garlic, minced
  • 2 tsp maple syrup

Main ingredients

  • 3 Tbsp extra-virgin olive oil, divided
  • 1 12-oz. fully-cooked chicken sausage links, sliced thin
  • 1 medium fennel bulb, cored and thinly sliced (reserve fronds for garnish)
  • 1 lb green cabbage, cored and chopped into 1 inch pieces (about 6 heaping cups)
  • to taste Kosher salt and black pepper

Instructions 

  • Mix apple cider vinegar, mustard, garlic, and maple syrup to make the glaze.
  • Cook sausage slices in 1 Tbsp olive oil until golden, then transfer to a plate.
  • Sauté fennel in remaining 1 Tbsp olive oil until softened, about 6 minutes.
  • Add cabbage, cover, and cook until softened, about 6 minutes. Stir every 2 minutes.
  • Uncover, add glaze, and cook until caramelized, about 3 minutes. Season with salt and pepper.
  • Return sausage to pan, cook 1-2 minutes to heat through, then garnish with fennel fronds.

Notes

Use fully cooked sausage for quick preparation and adjust seasoning to taste.
