A hearty and comforting soup made effortlessly in your crockpot, perfect for using leftover rotisserie chicken.

Ingredients

Main ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil or butter
  • 1 cup egg noodles, orzo, or rice
  • 1 handful baby spinach or fresh parsley (optional)
  • 1 whole lemon, juice of (optional)

Instructions 

  • Add all main ingredients to the crockpot and stir gently.
  • Cover and cook on low for 5-6 hours or high for 2.5-3 hours.
  • Stir in noodles and cook for 15-30 minutes until tender, adding spinach or parsley and lemon juice if desired.
  • Adjust seasoning, then serve hot.

Notes

You can use leftover chicken or rotisserie for quick prep.
