8ouncesmushrooms (sliced - white or cremini)
1mediumyellow onion (diced)
1mediumcarrot (peeled and diced)
1stalkcelery (diced)
3clovesgarlic (minced)
2tablespoonsall-purpose flour (plain flour in the UK)
4cupslow-sodium chicken stock
1poundchicken breasts (cut in half lengthwise)
½teaspoondried thyme
½cupheavy cream (double cream in the UK)
1teaspoonkosher salt
½teaspoonground black pepper
2tablespoonschopped fresh parsley
Instructions
Heat olive oil and melt butter in a large pot. Sauté mushrooms for 3 minutes.
Add onion, carrot, and celery; cook for 2 minutes. Stir in garlic and cook 30 seconds.
Sprinkle flour over vegetables; cook for 1 minute. Pour in chicken stock, add chicken, bay leaf, and thyme. Simmer 10-15 minutes until chicken is cooked.
Remove chicken, shred into pieces. Stir in heavy cream, season with salt and pepper, then add chicken back. Simmer 1 minute, then serve.
Notes
For extra flavor, garnish with additional parsley or serve with crusty bread.
