A quick and flavorful chicken stir fry with fresh vegetables and savory sauce, served over fluffy rice.

Sauce and Marinade

1tablespooncornstarch
1tablespoonminced fresh ginger
1tablespoonminced garlic
0.25teaspoonred pepper flakes
Main Protein
3skinless, boneless chicken breast halveschicken breast halves, thinly sliced
Vegetables
1headbroccoli(broken into florets)
1oniononion, cut into large chunks
1cupsliced carrots
1 (8 ounce) cansliced water chestnuts, drained
1green bell peppercut into matchsticks
Oils
2tablespoonssesame oil, divided
Instructions
Cook rice in boiling water until tender, about 20-25 minutes.
Mix soy sauce, brown sugar, and cornstarch; add ginger, garlic, red pepper flakes, and chicken. Marinate for 15 minutes.
Stir-fry vegetables in 1 tbsp sesame oil until just tender, about 5 minutes. Set aside.
Cook chicken in same pan with remaining oil until browned, about 2 minutes per side. Add vegetables and marinade; cook until chicken is cooked through, 5-7 minutes.
Serve stir-fry over rice.
Notes
Use fresh ginger and garlic for best flavor. Adjust spice level with red pepper flakes.
