A flavorful and easy-to-make chicken fried rice dish perfect for a quick weeknight dinner or meal prep.

Ingredients

Sauces and Seasonings

  • ½ cup soy sauce
  • 1-2 tablespoons chili garlic sauce
  • 3 teaspoons rice vinegar
  • 2-4 teaspoons fresh ginger (grated)
  • ¼ teaspoon sesame oil
  • 4 tablespoons soy sauce (divided)

Main Protein

  • 6 pieces boneless, skinless chicken thighs

Cooking Oils

  • 3 tablespoons extra virgin olive oil (divided)
  • 2 teaspoons garlic (minced)
  • ¾ cup yellow onion (cut into 1 inch pieces)
  • 1 ½ cup frozen peas and carrots
  • 2 eggs whisked eggs
  • 3 cups cooked rice (preferably day-old)
  • teaspoon ground black pepper
  • 3 green onions sliced
  • to taste red pepper flakes
  • to taste kosher salt

Additional Toppings

  • poached or fried eggs poached or fried eggs

Instructions 

  • Marinate chicken with 2 tbsp soy sauce for 15-20 minutes.
  • Mix sauce ingredients in a jar or bowl and set aside.
  • Cook chicken in a skillet with 1 tbsp oil until browned, then rest and cut into pieces.
  • Sauté garlic and onion in 1 tbsp oil, add peas and carrots, then push to side.
  • Add eggs to the center, scramble, then combine with veggies.
  • Add rice, chicken, pepper, green onions, red pepper flakes, soy sauce, and half of the sauce; stir until heated through. Serve with remaining sauce and toppings.

Notes

Use day-old rice for best texture and flavor.
