A flavorful and easy-to-make chicken fried rice dish perfect for a quick weeknight dinner or meal prep.

½cupsoy sauce
1-2tablespoonschili garlic sauce
3teaspoonsrice vinegar
2-4teaspoonsfresh ginger (grated)
¼teaspoonsesame oil
4tablespoonssoy sauce (divided)
Main Protein
6piecesboneless, skinless chicken thighs
Cooking Oils
3tablespoonsextra virgin olive oil (divided)
2teaspoonsgarlic (minced)
¾cupyellow onion (cut into 1 inch pieces)
1 ½cupfrozen peas and carrots
2eggswhisked eggs
3cupscooked rice (preferably day-old)
⅛teaspoonground black pepper
3green onionssliced
to tastered pepper flakes
to tastekosher salt

Instructions
Marinate chicken with 2 tbsp soy sauce for 15-20 minutes.
Mix sauce ingredients in a jar or bowl and set aside.
Cook chicken in a skillet with 1 tbsp oil until browned, then rest and cut into pieces.
Sauté garlic and onion in 1 tbsp oil, add peas and carrots, then push to side.
Add eggs to the center, scramble, then combine with veggies.
Add rice, chicken, pepper, green onions, red pepper flakes, soy sauce, and half of the sauce; stir until heated through. Serve with remaining sauce and toppings.
