This flavorful recipe features a whole chicken slow-roasted with smoky BBQ flavors and tender vegetables, perfect for a hearty meal.

Ingredients

Main

  • 2 kg whole chicken
  • 700 ml BBQ sauce, homemade or store-bought
  • 2 tablespoons olive oil
  • 1 kg roasting vegetables of choice (potatoes, carrots, brussels sprouts, etc.) (See post for more ideas)
  • 690 g Passata, or canned tomato sauce
  • 3 tablespoons liquid smoke
  • 105 g stevia, brown sugar substitute, or sugar/sweetener of choice
  • 2 1/4 teaspoons allspice
  • 2 teaspoons sumac (or 118ml (1/2 cup) apple cider/white vinegar)
  • 0.5-1 teaspoon hot (sweet, or smoky paprika, adjust to your taste)
  • 0.75 teaspoon cumin
  • 0.75 teaspoon ground black pepper
  • 2-3 teaspoons salt (to taste)

Instructions 

  • Rub the chicken with olive oil and season with spices, salt, and liquid smoke.
  • Place the chicken in a roasting pan and coat with BBQ sauce.
  • Roast in the oven at 150°C (300°F) for about 3 hours, basting occasionally.
  • Add vegetables around the chicken and continue roasting until tender.
  • Let rest for 10 minutes before carving and serving.

Notes

Ensure the chicken reaches an internal temperature of 75°C (165°F) for safety.
